Tarator – Cold Soup from Yogurt and Cucumber

Tasty and super quick cold soup made from cucumber and yogurt also known as tarator

Ready in 5 min, made in one bowl, this cold soup is a hit! It is a traditional Bulgarian soup named “Tarator” made from yogurt and cucumber. It is served chilled. A must try.


If you would like to prepare ahead of time and then mix all the ingredients together when ready to serve, then follow the video. Note, that you can prepare the soup into one bowl and store in the fridge until you are ready to serve it. If you would like to make the cold soup into one bowl then follow the recipe instructions below. These are just two different ways in mixing the ingredients together depending on how you want to plan your time.

Tarator - Cold Soup from Yogurt and Cucumber

Ingredients
  

  • 1 medium english cucumber
  • 4 cloves garlic
  • 500 grams yogurt plain
  • 1 tsp himalayan pink salt
  • 1 tbsp extra virgin olive oil
  • 1 tbsp dill dried

Optional

  • 1/4 bunch fresh dill
  • 1 tbsp walnuts chopped

Instructions
 

Mix all ingredients together

  • Wash hands with soap and water. Check out our article about how to wash hands properly
  • Gather all the ingredients.
    Made from cucumber and yogurt, tarator is a tasty and super easy cold soup. Ready in 5 minutes.
  • Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under running water.
  • With a grater, shred the English cucumber in a big bowl.
    Ready in 5 minutes, this delicious and tasty traditional bulgarian cold soup is made from yogurt and cucumber. In this step the cucumber is grated with the hand grater.
  • Finely chop the 4 cloves of garlic an add to the bowl with the English cucumber.

  • Optional: Add 1 tbsp chopped walnuts now if you decide to add them to the cold soup.
  • Add the well stirred 500 ml yogurt (smoothie like texture). In the same yogurt container, add cold water (500 ml), shake the container well and mix the liquid (water and residual yogurt) in the mixture.

Garnish

  • Add 1 tsp Himalayan pink salt, 1 tbsp dried dill and 1 tbsp extra virgin olive oil to garnish the soup.

Notes

  • My husband adds ice cubes to his cold soup as he likes it extra cold.
  • I usually peel the cucumber because that is how mu husband likes it. The cucumber peel, however, has good source of dietary fiber.
  • I use the yogurt jar to pour the exact same amount of water as I did with the yogurt. Also, there is some residuals on the jar from the yogurt that the water captures along prior me pouring into the bowl.
