Most of us love eating pizza. It is one of America’s signature foods. However, I always feel bad after eating 2-3 pizza slices because I know they are all high calories pieces. Not until I started making our own pizza from scratch with cauliflower. Now, I can eat as many slices as I want because all the ingredients are real and lower calories. Even the cheese which is the most caloric ingredient in this recipe is still good for you – calcium and protein anyone? Here is for enjoying pizza to the fullest!! Load On Veggies By Actually Enjoying What You Eat
Our mantra is to help people eat healthy but also enjoy what they are eating. My husband is now conditioned to ask me – what is this made from? He knows that our pizza is made healthy, our cheesecake is made healthy, etc but all taste super delicious and he just wants to know what he is eating. He suggested I start a TV show named “Guess what you are eating”!! Maybe one day I will.
Now, back to the chase, we would hate for you to sit in front of tasteless, dull, bland food and try to eat it just because someone told you it is healthy and good for you. Instead, we try to make our recipes super delicious with healthy ingredients. This pizza crust is the testament of our efforts. We dare you to try it because you will be super surprised how tasteful this crust is. Especially when you top this cauliflower pizza crust with mozzarella cheese with amazing and favorite to you toppings you will be asking for more and more of it! If you accept our challenge and try it, drop us a note in the comments of how did it go.
Keto-Friendly Cauliflower Pizza Crust With Mozzarella Cheese
Gluten-Free And Guilt-Free Pizza Crust
Since we do not use flour for the crust of this pizza, this pizza crust is gluten-free. We use cauliflower rice made from fresh cauliflower for the base. The egg binds the rice with cheese so they hold together. We squeeze the cauliflower water out of the rice so the pizza crust becomes crisp and not soggy. I make this pizza thin crust. Next, I am going to experiment with having more cauliflower rice to see how the pizza crust will hold together if the slices are thicker. Stay tuned!
Pitfalls To Avoid When Making Cauliflower Pizza Crust With Mozzarella Cheese
There are some small prints to know when making this amazingly delicious cauliflower pizza crust with mozzarella cheese. First, make sure you give it a lot of love when squeezing that water out of the cauliflower rice. We know it feels like a workout but it is all worth at the end. Otherwise, the pizza may be soggy. Second, use either a bigger head of cauliflower or 2 small heads of cauliflower. You will be spending about 1 hour in the kitchen making this masterpiece. It might be disappointing to end up with a very small individual or “personalized” pizza as my husband calls it. Although delicious, you probably will leave me a hate comment below saying – this pizza didn’t fill up my pizza pan!
Serving Suggestions
At my house, we use the cauliflower pizzas as appetizers, snacks, and entry from a bigger meal course. It is 5 of us so in a matter of minutes, the pizza is gone. I don’t like freezing the pizza dough so I just make one pizza as a snack or an entry in a dinner course. I love making this pizza because even my pickiest eater at the family ends up with lots of serving of veggies! We love this cauliflower pizza crust with mozzarella cheese topped with pepperoni, just cheese, supreme, bacon, sausage, and whatnot. Just don’t overdo the topping as the crust is fragile and you may end up spooning the pizza to eat it.
Ingredients For Cauliflower Pizza Crust With Mozzarella Cheese
Cauliflower
I make our cauliflower rice from scratch. I use the oven as I am not a big fan of the microwave. It is very easy and fast to make your own cauliflower rice. If you are not up to making your own cauliflower rice, don’t worry. Many stores now carry it and you can buy it frozen. Cauliflower is a nutrient-dense ingredient rich in fiber, vitamin B, C, folate, and antioxidants. Because we use this vegetable as a base of the pizza it makes the pizza low calories, low sodium, low fat, low sugar pizza showpiece. We love using cauliflower rice in our recipes so check out some other ideas below:
- Ground turkey, cabbage, and cauliflower rice
- Beef stir fry with cauliflower rice
- Sweet and sour pork over cauliflower rice
Amazon’s cauliflower option seems expensive so check out our Chicory button for more affordable options.
Mozzarella Cheese
I buy a block of low moisture part-skim mozzarella cheese and use it for many recipes. In this specific recipe, we use the food processor to shred some mozzarella cheese. It is not only cheaper to make your own shredded mozzarella, but I also save room in the fridge of not having too many packages of the same cheese. Part-skim mozzarella has lower fat and lower calories than whole milk mozzarella cheese. It is a great source of calcium, protein, and phosphorus.
Egg
Eggs are really nutritious. They are a great source of protein, vitamins B and D, selenium, zinc, copper, and iron. In this specific recipe, we use the egg to bind the cauliflower rice together. Do wash hands after you handle eggs. We try to include this step in our recipes to follow the food safety guidelines and help people use safety and health-wise steps while cooking.
Seasoning For Cauliflower Pizza Crust With Mozzarella Cheese
For this cauliflower pizza crust with mozzarella cheese, we use traditional pizza and pasta seasoning – oregano and basil. Most of the marinara and pizza sauces I use already have this seasoning already mixed so I just magnify the flavor by including it in the crust. You can also skip that step if you feel you will have enough flavor just from the pizza sauce. Sometimes I include fresh herbs on top of the pizza too. If I have fresh basil I would totally put it on top of all my pizza pieces. I just love the taste of basil. If you are a fan of another herb you absolutely love with your pizza, drop us a comment. We would love to hear what you like adding to your pizza.
Equipment
- Food processor – For this recipe, you will need a food processor to make the cauliflower rice. If you don’t have one, then you can buy store-bought cauliflower rice. We strongly suggest buying a food processor as it is one of our most used kitchen appliances. For example, for this recipe, we bought a whole piece of mozzarella cheese and then used the food processor to make shredded mozzarella. It saves a lot of money on cheese!
- Pizza pan – We use a circle pizza pan for this recipe to bake our masterpiece. If you like pizza, you probably already have one at home. It is super convenient if you buy a frozen pizza from the store too.
- We love eating pizza at our house. Hence, we own a pizza cutter. You can also cut the pizza with a knife, but it is so much easier to use the pizza cutter.
- We are big fans of food safety and began making our recipes compliant with food safety guidelines. As such, we started using a vegetable brush to clean our hard produce. It does give an extra piece of mind that you are doing your best to clean the produce.
- To really have a perfect pizza crust, you do need to get rid of as much water out of the cauliflower rice as you can. Layering cheesecloth pieces is one of the easiest ways to do so.
- Pepper grinder – most recently we started using a pepper grinder as opposed to pre-grounded black pepper. The flavor is astonishing!! I would never buy ground pepper ever again. When you grind the pepper especially on top of a meal just before eating it, you will see a tremendous flavor difference. I dare you to try it!
- The rest of the needed equipment is standard items you probably already have in your kitchen such as parchment paper, mixing bowls, measuring set, etc.
Cauliflower Pizza Crust With Mozzarella
Equipment
Ingredients
- 1 head cauliflower
- ½ cup mozzarella shredded, part skim
- 1 egg
- ½ tsp oregano dried
- ½ tsp basil dried
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Preheat oven to 375 F
- With the food processor, shred about ½ cup part-skim mozzarella cheese
Make Cauliflower Rice
- Scrub the cauliflower with a clean vegetable brush under running water.
- Remove the outer leaves of the cauliflower, separate into florets and chop into smaller pieces so that they can go through the food processor opening.
- With the food processor set up with the shredding blade, pulse the cauliflower florets to become "rice" like.
- Cover a baking sheet with parchment paper. Transfer the cauliflower rice to the baking sheet and spread evenly.
- Bake cauliflower rice on 375 F for 15 min.
Squeeze water out of cauliflower rice
- Let the cauliflower rice cool for a few minutes as you will be handling it with hands.
- In a mixing bowl, set up 2-3 layers of cheesecloth.
- Transfer the cauliflower rice to the cheesecloth. Squeeze as much water as you can out of the cauliflower rice. This will be your hand's workout for the day. Squeeze the rice until there is no more water coming out of it.
- I use the cauliflower water for stock, smoothies, etc. If I cannot use it immediately, I freeze it and store it in the freezer until I need it.
Make the pizza dough
- Preheat oven to 450 F.
- In a mixing bowl, add the drained cauliflower rice, 1 egg, ½ cup part skim shredded mozzarella cheese, ½ tsp dried basil, and ½ tsp dried oregano. Wash hands after handling eggs. Mix well.
- Cover a pizza pan with parchment paper.
- Transfer the pizza dough in the middle of the pizza pan. With hands, spread out to flatten the cauliflower dough and form a pizza crust.
Bake
- In a preheated oven of 450 F, bake the cauliflower dough for 20 min.
- Flip over the crust and enjoy with a topping of your choice!

Notes
- You can buy ready cauliflower rice from the store. I just like to make it myself.
- Because we use cauliflower dough, this pizza is thin-crust
- We never have any leftovers, but I think the pizza will be fine in the fridge for 1-3 days.
- I don’t freeze food, but if you want to prepare it ahead of time and then pop it in the oven for a quick appetizer or dinner, the pizza can be frozen for about a month.
- Many people asked me why not use the microwave to cook the cauliflower. The answer is that I don’t like the microwave as it kills a lot of good nutrients. I prefer the oven. Also, the oven cooks much more evenly than the microwave. If you ask a mom who had to warm up baby food or baby milk you will be told to use a bottle warmer and NEVER the microwave. Or you risk burning your baby. Try warming up your milk in the morning. It is super hot on the top and lukewarm in the middle. It has just become a habit of mine to avoid the microwave as much as I can.
- We do our best to follow the cooking safe guidelines of the saferecipeguide.org hoping this will help our readers get into good cooking habits!
- I buy a block of low moisture part skim mozzarella cheese and shred it myself with the food processor. It is cheaper and also I don’t have to keep an extra bag of cheese in the fridge. That way I use the same block of cheese for multi-purposes.
