The crust of this amazing supreme pizza is made of fresh cauliflower. We do not use flour as a base for the crust so all our gluten-free friends can enjoy it. It also makes it a healthier and low-calorie pizza. I love making our pizza with cauliflower because I have my kids eat vegetables with love. I would spend 1 hour in the kitchen any day as long as I know my kids are loading with superfoods.
Our Secret for Best Cauliflower Crust
We squeeze out the water from the cauliflower rice to avoid sogginess. I use the cauliflower water/juice for stock, smoothies, rice, juices, etc. The stock is packed with vitamins so I try to use it as much as possible. If I cannot use it right away, then I freeze it with the ice cube tray. Once frozen, you can use it after months have passed.

Ingredients For Supreme Cauliflower Pizza
We use real ingredients for our recipes. For example, eggs, cauliflower, onion, sweet peppers, and mozzarella cheese are all great healthy ingredients to use in your everyday life. Of course, you don’t want to overeat mozzarella cheese as it is very calorie dense. However, when you use it moderately on a recipe to add extra flavor, it is a great ingredient.
Cauliflower
We use fresh cauliflower as our main ingredient for the pizza crust. For our best pepperoni pizza, we use a crust made with mozzarella cheese. Check out our cauliflower pizza crust made with ricotta cheese for more ideas.
We make cauliflower rice from scratch using a food processor. The cauliflower rice is the foundation for the pizza crust. Once we process the fresh cauliflower into rice with the food processor, we put it in the oven to bake for several minutes. I am not a big fan of microwaves. I also find it easier to bake the cauliflower rice than steam it or cook it on the stove.
It is very easy and fast to make your own cauliflower rice. If you are not up to making your own cauliflower rice, don’t worry. Many stores now carry packaged cauliflower rice and you can buy it frozen. In fact, some stores now carry frozen cauliflower pizza crusts and frozen cauliflower pizzas. I prefer making my own pizza from scratch. I feel better when I know what I put in my meal. However, if you don’t have time to do it on your own, the frozen options are better than the flour ones.
Cauliflower is a nutrient-dense ingredient rich in fiber and , vitamins B, C, folate, and antioxidants. Mozzarella Cheese
We use mozzarella cheese to make the pizza crust, as well as, to top our pepperoni pizza. I buy a block of low moisture part-skim mozzarella cheese and use it for many recipes. In this specific recipe, we use the food processor to shred some mozzarella cheese. It is not only cheaper to make your own shredded mozzarella, but I also save room in the fridge by not having too many packages of the same cheese. I also give the shredding task to my kids when they help me in the kitchen. Part-skim mozzarella has lower fat and lower calories than whole milk mozzarella cheese. It is a great source of calcium, protein, and phosphorus.
Egg
Eggs are really nutritious. They are a great source of protein, vitamins B and D, selenium, zinc, copper, and iron. In this specific recipe, we use one egg to bind the cauliflower rice together and form the crust. Do wash your hands after you handle eggs. We try to include this step of washing hands in our recipes to follow the food safety guidelines and help people use safety and health-wise steps while cooking. Seasoning For Pepperoni Cauliflower Pizza Crust With Mozzarella Cheese
For this cauliflower pizza crust with mozzarella cheese, we use traditional pizza and pasta seasoning – oregano and basil. Most of the marinara and pizza sauces I use already have this seasoning mixed so I just magnify the flavor by including it in the crust. You can also skip that step if you feel you will have enough flavor just from the pizza sauce. If you have a specific pizza seasoning you love, then swap the oregano and basil for it. I love savory and sometimes I will use savory instead of Italian seasoning, basil, and oregano.
When I have fresh herbs, I chop them finely and sprinkle them on top of the pizza. Fresh basil is one of my favorite pizza garnishes. I would put it on top of all my pizza pieces. Yes… I would sprinkle it on my pizza and not the entire pizza as my husband is not a big fan of fresh basil. I just love the taste of basil and enjoy it every time I can. Pizza Sauce For Pepperoni Cauliflower Pizza
We use store-bought pizza sauce for our pizzas. When I ran out of pizza sauce, I just use marinara. I like using jars as opposed to cans as it is healthier. Sometimes cans contain chemicals that harm our health. For example, some cans have BPA. Hence, I try to avoid using canned food at home. Luckily, pizza sauces and marinara are widely available in jars. When choosing which marinara or pizza sauce to buy, I look at the ingredients and make sure they are whole ingredients such as tomatoes, basil, garlic., etc. If I don’t like an ingredient (i.e. sugar, citric acid) I just don’t buy this brand. Pepperoni
My family likes pepperoni. We strive for balance and happiness, so salami is on our menu every once in a while. Some of you may be surprised, but red meat is not that bad for you after all. Do extensive research and you will find out that many of the studies done where we are warned against red meat actually didn’t have enough sampling and data back up for it. Newer studies are actually showing that red meat in moderation (like every other ingredient on the meat list) is a good addition to our diets.
In any event, healthy or not, my husband and kids are really happy to see pepperoni on the pizza so I include it sporadically! After all, we only have one life to live. Who knows what the research 20 years from now will show and make pepperoni a healthy option. Maybe then we will be told to eat it every day. I am a believer in moderation and a balanced diet so I include pepperoni in our food. If you are not, just skip the pepperoni.
Mozzarella Cheese Topping
We sprinkle our pizza crust with mozzarella cheese for additional cheese flavor. If you like a different cheese (cheddar, feta, etc) feel free to use it instead or as an addition to the mozzarella cheese topping. My family loves mozzarella cheese as a pizza topping so most of our pizzas have mozzarella.
Sweet Peppers
This recipe uses sweet peppers as part of the topping. Sweet peppers are rich in vitamins C, K1, vitamin E, vitamin A, folate, and potassium. My kids prefer sweet peppers to bell peppers. Don’t ask me why, as I have no idea. When they look at me cooking and see the sweet peppers they are more likely to eat the dish I make. Hence, I usually cook pizza with sweet peppers. However, if you have bell pepper handy, just use it. The taste isn’t drastically different. Maybe the sweet peppers are also more tender than the bell peppers and more suitable for a delicate pizza crust made of cauliflower.
Onion
Onions are very healthy. I try to use them daily at home. For instance, they are rich in vitamin C, folate, vitamin B6, and potassium. Many people don’t like the taste of onions. Some people even have an onion allergy. If you are one of those individuals, needless to say, just skip this ingredient.
Bacon
Bacon is one of the “luxury” ingredients of our pizza. As with pepperoni, feel free to exclude this ingredient from the pizza if you have a negative opinion about it. My family does have bacon sometimes. Using it for a topping to this pizza adds an extra flavor and makes eating the vegetables used in this recipe more pleasant. To make the recipe healthier, if you want when sateauing the bacon, you can get rid of the extra oil that the bacon will secret. Bacon does have some nutrients such as Vitamins B1, B2, B3, B5, B6, and B12, selium, phosphorus, iron, magnesium, zinc, and potassium. However, the most benefit of including bacon and pepperoni in this recipe is that the body absorbs the nutrients much better when the meat rich in iron is bound to all the vitamin-rich vegetables.
Equipment
- Food processor – For this recipe, you will need a food processor to make the cauliflower rice. If you don’t have one, then you can buy store-bought cauliflower rice. We strongly suggest buying a food processor as it is one of our most used kitchen appliances. For example, for this recipe, we bought a whole piece of mozzarella cheese and then used the food processor to make shredded mozzarella. It saves a lot of money on cheese!
- Pizza pan – We use a circle pizza pan for this recipe to bake our masterpiece. If you like pizza, you probably already have one at home. It is super convenient if you buy a frozen pizza from the store too.
- We love eating pizza at our house. Hence, we own a pizza cutter. You can also cut the pizza with a knife, but it is so much easier to use the pizza cutter.
- We are big fans of food safety and began making our recipes compliant with food safety guidelines. As such, we started using a vegetable brush to clean our hard produce. It does give an extra piece of mind that you are doing your best to clean the produce.
- To have a perfect pizza crust, you do need to get rid of as much water out of the cauliflower rice as you can. Layering cheesecloth pieces is one of the easiest ways to do so.
- Pepper grinder – most recently we started using a pepper grinder as opposed to pre-grounded black pepper. The flavor is astonishing!! I would never buy ground pepper ever again. When you grind the pepper especially on top of a meal just before eating it, you will see a tremendous flavor difference. I dare you to try it!
- The rest of the needed equipment is standard items you probably already have in your kitchen such as parchment paper, mixing bowls, measuring set, etc.
Supreme Cauliflower Pizza

Ingredients
- 2 oz bacon
- 10 pieces deli pepperoni
- ¼ cup pizza sauce
- 3 sweet peppers
- ½ small onion
- 1 head cauliflower
- ¾ cup mozzarella shredded, part skim
- ¼ cup parmesan cheese grated
- 1 egg
- ½ tsp oregano dried
- ½ tsp basil dried
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Preheat oven to 375 degrees Fahrenheit
- With the food processor, shred about 1 cup part-skim mozzarella cheese
Make Cauliflower Rice
- Scrub the cauliflower with a clean vegetable brush under running water.
- Remove the outer leaves of the cauliflower, separate them into florets and chop them into smaller pieces so that they can go through the food processor opening.
- With the food processor set up with the shredding blade, pulse the cauliflower florets to become "rice" like.
- Cover a baking sheet with parchment paper. Transfer the cauliflower rice to the baking sheet and spread evenly.
- Bake cauliflower rice at 375 degrees Fahrenheit for 15 min.
Squeeze water out of cauliflower rice
- Once the cauliflower is roasted, take it out of the oven. Let the cauliflower rice cool for a few minutes as you will be handling it with your hands.
- In a mixing bowl, set up 2-3 layers of cheesecloth.
- Transfer the cauliflower rice to the cheesecloth. Squeeze as much water as you can out of the cauliflower rice. This will be your hands' workout for the day. Squeeze the rice until there is no more water coming out of it.
- I use the left over cauliflower water for stock, smoothies, etc. If I cannot use it immediately, I freeze it and store it in the freezer until I need it.
Prep pizza topping
- While the cauliflower is roasting, cut up 2 oz of bacon into small pieces.
- Saute the bacon over medium heat for 3-5 minutes.
- While the bacon is cooking, slice ½ onion into a crescent shape (half rings)
- Chop 3 mini sweet peppers into small pieces (about 1 inch)
- To the bacon, first add the onions to saute for 2-3 minutes, and then add the sweet peppers to saute for another 2-3 minutes. Once the bacon is well cooked and the vegetables are soft, turn off the heat and set the pan aside.
Make the pizza dough
- Preheat oven to 450 Fahrenheit.
- In a mixing bowl, add the drained cauliflower rice, 1 egg, ¼ cup part-skim shredded mozzarella cheese, ¼ grated parmesan cheese, ½ tsp dried basil, and ½ tsp dried oregano. Wash hands after handling eggs. Mix well.
- Cover a pizza pan with parchment paper.
- Transfer the pizza dough in the middle of the pizza pan. With hands, spread out to flatten the cauliflower dough and form a pizza crust.
Bake
- In a preheated oven of 450 Fahrenheit, bake the cauliflower dough for 20 min.
Topping
- Flip over the crust
- Spread evenly ¼ cup pizza sauce
- Top the pizza with ½ shredded mozzarella cheese
- Arrange about 10 pepperoni pieces on top of the pizza
- Top the pizza with sauteed onions, sweet peppers, and bacon.
- Bake at 450 degrees Fahrenheit for an additional 5-10 min

Notes
- You can buy ready cauliflower rice from the store. I just like to make it myself.
- Because we use cauliflower dough, this pizza is thin-crust
- We never have any leftovers, but I think the pizza will be fine in the fridge for 1-3 days.
- I don't freeze food, but if you want to prepare it ahead of time and then pop it in the oven for a quick appetizer or dinner, the pizza can be frozen for about a month.
- Many people asked me why not use the microwave to cook the cauliflower. The answer is that I don't like microwaving as it kills a lot of good nutrients. I prefer the oven. Also, the oven cooks much more evenly than the microwave. If you ask a mom who had to warm up baby food or baby milk you will be told to use a bottle warmer and NEVER the microwave. Or you risk burning your baby. Try warming up your milk in the morning. It is super hot on the top and lukewarm in the middle. It has just become a habit of mine to avoid microwaving as much as I can.
