
Voted best salad in taste of Europe, this traditional Bulgarian recipe is easy to make, very healthy and delicious. We use apple cider vinegar with the mother for an enzyme and probiotics (good bacteria) boost. The chopped vegetables, extra virgin olive oil and feta cheese make this recipe also rich in protein fiber, potassium, calcium, iron and vitamin C.
Shopska Salad
Ingredients
- 4 medium tomatoes
- 1 medium cucumber English
- 1 medium bell pepper yellow
- 4 stalks green onion
- 1/3 cup crumbled feta cheese Bulgarian
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar with mother
- 10 stalks cilantro fresh
- 1 medium avocado
Instructions
- Wash your hands with soap and water. Check our article on more details on how to properly wash your hands.
- Gather all ingredients (including apple cider vinegar with the mother and extra virgin olive oil which is missing from the picture)
- Scrub tomatoes firmly with a clean vegetable brush under running water. Dice 4 medium tomatoes into 1-inch cubes and place them into a salad bowl
- Scrub 1 medium cucumber firmly with a clean vegetable brush under running water. Dice the medium cucumber into half-moon shapes and add to the tomatoes into the bowl
- Gently rub green onions under cold running water. Scrub the bell pepper firmly with a clean vegetable brush under running water. Chop the 4 stalks green onions and 1 medium yellow bell pepper and add to the salad bowl
- Scrub 1 avocado firmly with a clean vegetable brush under running water. Peel and take the pit out. Chop the medium avocado into 1 inch cubes and add to the salad bowl
- Add 1/3 cup crumbled Bulgarian feta cheese to the salad bowl
- Gently rub the cilantro leaves under cold running water. Chop the fresh 10 stalks cilantro leaves. Add to the salad bowl.
- Season the salad with 2 tbsp extra virgin olive oil and 1 tbsp apple cider vinegar with the mother. Mix well.

- Instead of apple cider vinegar with the mother, you can use freshly squeezed lemon juice (1 tbsp)
- Instead of cilantro, you can use fresh parsley
- I use cheese for salt in this recipe, hence I don't put any additional table salt
