Homemade original pumpkin pie recipe with phyllo dough

Original pumpkin filo (aka fillo, phyllo) dough pie recipe ready in 30 min. Great source of Vitamin A. No processed sugars added to this recipe. We also use the same filling for our pumpkin pie puff pastry.

We not only make this recipe for Thanksgiving celebration, but also on a bi-weekly basis as the pumpkin puree and seeds mixture is so nutritious. It is also a very quick recipe that even my older kid can make by herself (score!).

  • Wash hands with soap and water. Check out our article about how to wash hands properly
  • Gather all ingredients

  • Grind all seeds of your choice with a coffee grinder or any tool you have available in the kitchen. You can also buy already ground seeds. You will need ½ cup of ground seeds to put into the batter.

  • Preheat oven to 350 degrees Fahrenheit (175 Celsius)

Make filling

  • In a bowl, combine 15 oz (more or less depending on your taste) pumpkin puree, ½ cup honey, ½ cup ground seeds, 1 ½ tsp ground cinnamon, 1 tsp ground ginger, ¼ tsp ground nutmeg, ¼ tsp ground clove.
    In a bowl combine all ingredients for the pumpkin pie recipe made at home from pumpkin puree and fillo dough along with some honey and spices.
  • Mix well with a spoon.

Assemble pie

  • Grease a baking dish with avocado oil (I use spray)
  • Layer 4-5 sheets of filo (aka fillo, phyllo) dough.

  • Spread some filling on top

  • Layer 4-5 sheets of filo (aka fillo, phyllo) dough

  • Spread some filling on top. And so on until you have no more filling and filo dough left.
  • The last layer is will filo dough. Spray the top layer with avocado oil.

  • Cut the pie into 18 pieces. I usually cut it into 2 lines across the wider side of the baking dish, and 6 lines parallel to the short side of the baking dish. It is easier to cut it before baking.

  • Bake for 25 minutes until the top of the filo dough is golden brown.

  • I grind all types of seeds ahead of time and store in air tight container for several days. I use the seeds in many recipes such as breads, pancakes, muffins, etc. It is easier and quicker to grind more seeds at one time versus every time I need them for a recipe.
  • You can buy already ground seeds at the store too if you don't have a tool to grind them yourself or want to save time. I don't grind the hemp seeds.
  •  1 tbsp pumpkin pie spice can be substituted for the ground cinnamon, ginger, nutmeg, and cloves
  • For even healthier recipe, you can make your own pumpkin puree from a pumpkin. Bake the pumpkin, and then puree the flesh.
