
I make this recipe on busy nights. I have my husband (or I from the night before) boil the potatoes. When I get home, it takes just 10 minutes to pan-fry the potatoes, cheese and eggs for this delicious, warm dinner. I also use this recipe for a side when we grill or bake just meat.
This recipe has many nutrients as all ingredients used in the recipe are nutrient rich. Avocado oil, potatoes, eggs, and feta cheese are nutrient dense ingredients making this recipe rich in calcium, iron, protein and vitamin A, vitamin C, potassium, vitamin B6, fiber, magnesium, lutein and zeaxanthin, and more
It is hard to get the needed daily iron recommendation if you are a women between the age of 18 and 50. With this recipe you get a whooping 9 mg of iron with only 217 calories serving. This is huge!!
Potatoes, cheese, and eggs recipe

Ingredients
- 5 potatoes Idaho
- 2 eggs
- ¼ feta cheese Bulgarina, crumbled
- 1 tsp dill dried
- 1 tbsp avocado oil
Instructions
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under running water.
- Pour 2 liters of water in a big saucepan over high heat
- Add 5 Idaho potatoes
- Once the water is boiling, reduce the heat to medium-high
- Boil the potatoes until done (i.e. about 45 minutes). The potatoes will be soft when pierced with a fork
- You can wait for the potatoes to cool down or put them under cold running water to cool them off
- Once not hot to the touch, peel the potatoes
- Dice the potatoes to about 1 inch cubes
- Over medium heat, add 1 tbsp avocado oil to a pan
- Once the oil is warm, add the cubed potatoes, ¼ crumbled Bulgarian feta cheese, and 2 eggs
- Stir until the eggs are done
- Season with dill
- Enjoy!

Notes
- Fresh dill is best, however, in this recipe I use the dried one as I ran out of fresh.
- You can boil the potatoes ahead of time and cook this for dinner on a busy night.
