Potatoes Are Healthy
Potatoes are healthy starchy vegetables. They make this recipe rich in potassium, fiber, iron, and Vitamin C. Usually, people think potatoes are unhealthy because they are told – “watch those french fries” or “watch those potato chips”. However, the issue is not in the potatoes itself, but what we do to them. If we boil them, bake them, include them in meals as an ingredient, potatoes are very healthy options.
How We Cook Potatoes Matters
If we deep fry them with oil rich in trans fats, then they are not healthy. The french fries and potato chips we buy from the store are unhealthy because of what we do to process the potatoes – frying them. When potatoes are fried then we might be eating lots of unhealthy trans fats, salt, and they also can have an increased amount of acrylamide. Acrylamide is a known mutagen, carcinogen, and neurotoxin. Since acrylamide is not healthy, the Center for Disease Control (CDC) is studying how eating foods high in acrylamide affects our body. Even if we bake the potatoes and then load them with butter, sour cream and other fatty ingredients, they become unhealthy. Potato Salad
Ingredients
- 5 potatoes Idaho
- 3 cloves garlic
- 3 springs green onion
- 3 stalks fresh dill
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar with the mother
- ¼ tsp pink Himalayan salt
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under running water.
- Pour about 1-2 liters warm water into a big pot (the water should cover the potatoes)
- Add a pinch of pink Himalayan salt to the warm water
- After washing the 5 Idaho potatoes add them to the water (with skin)
- Boil for about 1 hour or until the potatoes are soft when pierced with a fork
- While the potatoes boil, chop the 3 springs green onions and mince the 3 cloves garlic
- Mince the leaves from the 3 stalks fresh dill
Make the salad
- Once the potatoes cool down, peel their skin and cut them into 1-inch squares (bites) into a mixing (salad) bowl
- Add the 3 springs chopped green onion and the minced 3 cloves garlic
- Season the potatoes with 2 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar with the mother, ¼ tsp pink Himalayan salt.
- Garnish with the minced fresh dill leaves. Mix well until all ingredients blend together.

Notes
- Make sure there is enough space for the 5 potatoes you will be placing in the pot with water so when you do put them into the pot the water doesn’t spill over
- You may need to periodically add warm water to the potatoes, so they are all covered in water all the time they are boiling.
- You can cool the potatoes down by running cold water or placing the potatoes into the freezer for few minutes.
- You can also just wait for the potatoes to cool down and multi-task with something else.
- This recipe is with Idaho potatoes, but you can pick any other type of white potato
