This is very simple, delicious and healthy potato salad recipe that only takes 10 min active time to prepare.

Potatoes Are Healthy

Potatoes are healthy starchy vegetables. They make this recipe rich in potassium, fiber, iron, and Vitamin C.   • 5 potatoes Idaho
  • 3 cloves garlic
  • 3 springs green onion
  • 3 stalks fresh dill
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar with the mother
  • ¼ tsp pink Himalayan salt

  • Gather all ingredients

  • Gently rub  produce under cold running water. Scrub firm produce with a clean vegetable brush under running  water.
  • Pour about 1-2 liters warm water into a big pot (the water should cover the potatoes)
  • Add a pinch of pink Himalayan salt to the warm water
  • After washing the 5 Idaho potatoes add them to the water (with skin)
  • Boil for about 1 hour or until the potatoes are soft when pierced with a fork
  • While the potatoes boil, chop the 3 springs green onions and mince the 3 cloves garlic
  • Mince the leaves from the 3 stalks fresh dill

Make the salad

  • Once the potatoes cool down, peel their skin and cut them into 1-inch squares (bites) into a mixing (salad) bowl
  • Add the 3 springs chopped green onion and the minced 3 cloves garlic

  • Season the potatoes with 2 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar with the mother, ¼ tsp pink Himalayan salt

  • Garnish with the minced fresh dill leaves. Mix well until all ingredients blend together.

  • Make sure there is enough space for the 5 potatoes you will be placing in the pot with water so when you do put them into the pot the water doesn’t spill over
  • You may need to periodically add warm water to the potatoes, so they are all covered in water all the time they are boiling.
  • You can cool the potatoes down by running cold water or placing the potatoes into the freezer for few minutes.
  • You can also just wait for the potatoes to cool down and multi-task with something else.
  • This recipe is with Idaho potatoes, but you can pick any other type of white potato
