Eggs With Ham And Spinach Tacos Ingredients
Spinach
I try to sneak in healthy nutrients into foods and this recipe is one example. My kids love eggs so I add spinach puree to them. The flavor doesn’t change much and my kids still eat the eggs. They do call them “green eggs” and love them. Thank you, Dr. Seuss, for helping me win this green eggs with ham battle!
Ham
I include ham in the eggs just for my husband who loves to eat meat in every meal if I let him. If you are vegetarian/vegan just skip the cooked ham. Also, you can use different meat. I use ham to coax my kids into eating the nutrient-dense meal with Dr. Seuss’s story.
Tortillas
We love corn tortilla. If you prefer you can skip the tortilla, use flour-based tortillas, or some tortillas are made out of veggies. Whatever your choice, just cook the tortillas according to the manufacturer’s instructions.

Equipment
I use a food processor to make the spinach puree for the eggs with ham and spinach tacos recipe. I love the pan I scramble the eggs in. It is not only a stainless steel pan so your food is not contaminated with chemicals, but also non-stick so your food doesn’t stick! I have stainless steel pans that aren’t non-stick and I use them for different purposes. In this case, I am using the stainless steel pan that isn’t non-stick for wilting the spinach. If you don’t have a colander, you can use a big sieve (also known as a strainer).
Eggs with Ham And Spinach Tacos (Tortillas)
Equipment
Ingredients
- 12 eggs
- 1/2 cup ham cooked and chopped
- 1 bunch spinach fresh
- 1 tbsp avocado oil
- 6 corn tortillas
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Chop the cooked ham into small bites to fit into 1/2 cup
- Wash hands after dealing with meat.
Spinach Puree
- Gently rub 1 bunch of spinach under cold running water.
- Over medium heat boil 1 cups of water
- Once the water starts boiling, add spinach
- Simmer for 1-2 minutes until the spinach is wilted
- Puree the spinach. I use a food processor.
Cook the Eggs
- Over medium heat, add 1 tbsp avocado oil to a pan
- Once the oil is warmed up, add 12 eggs
- Scramble eggs for about 1-2 minutes
- Add the spinach puree and mix well with the eggs
- Add 1/2 cup chopped cooked ham. Stir.
- Cook for additional 5 minutes until the eggs are done. Total about 10 min.
Heat Tortillas
- Heat the 6 corn tortillas according to package directions
- Enjoy!

Notes
- You can use 1-2 tbsp of water to wilt the spinach. I use 1 cup as I save the water rich in vitamins for stock.
- I use spinach puree for many recipes to sneak in great nutrients to the dishes. Just search our dashboard for spinach.
