Flourless Brownies with chocolate chips

I am sweets lover. This is one of my favorite recipes because not only I love eating brownies, but also this recipe make it healthier to do so. The garbanzo beans help with constipation so it is a double bonus eating these brownies! My kids love it too, and I feel good when I know I am feeding them with healthy food and that they enjoy it. This recipe is rich in protein, iron, and fiber.

  • Wash hands with soap and water. Check out our article about how to wash hands properly
  • Gather all ingredients
  • Preheat oven to 350 Fahrenheit
  • Line baking pan with parchment paper
  • Grease with non-stick cooking spray and set aside
  • Combine 1 ¼ cup garbanzo beans (chickpeas), ¼ cup melted coconut oil, 2 eggs, ¼ cup honey, 2 tsp pure vanilla extract, 1/3 cup cocoa powder, ½ tsp baking powder, and a pinch of pink Himalayan salt into food processor (or blender)

  • Blend until mixture is smooth.
  • Add ¼ cup dark chocolate chips and mix manually with spoon (don’t turn the food processor on).

  • Spread the batter evenly into baking pan.
  • Bake for 30 min, or until a toothpick inserted into the brownies batter comes out clean. Be aware that if you hit a chocolate chip the toothpick will not come out clean, so you will need to try again to test the batter.
  • Cut into 16 squares.
  • Enjoy!

Notes

  • Garbanzo beans are also know as chickpea
  • I cook the garbanzo beans following the package directions. I use some of the beans for the brownies and the rest for hummus and salads. If you don't want to boil your own beans, then you can use canned chickpeas. Just make sure you drain the water out from the can.
  • ¼ cup coconut oil melted (in liquid form)
  • I try to use unsweetened organic cocoa powder when possible.
  • I use gluten free baking powder
  • I use avocado oil for cooking spray
