
Welcome to our delicious egg and bacon cake with mushrooms, cottage cheese, and pickles rich in protein, calcium, iron, vitamins, and minerals. It might remind you of a quiche but it is a healthier version without the crust. Since we do not use a flour/pastry crust in this recipe, it makes it gluten-free. Also, the ingredients might remind you of an omelet, but since we don’t fry it, our cake is a much healthier version. Our egg and bacon cake is super easy to make and is Keto friendly.

Ingredients for the egg and bacon cake
We use 5 main ingredients for the egg and bacon cake, baking soda for volume, and ground black pepper to enrich the flavor.
Bacon and mushroom layer
Although bacon might seem like an unhealthy ingredient, it does have its good side other than the great taste! It is rich in protein, Vitamin Bs, selenium, phosphorous, iron, magnesium, zinc, and others. Yes, bacon can contribute to your overall daily diet, but just don’t overdo it. Bacon has a considerable amount of fats and salt that need to be moderated. Since bacon is a processed food treated with nitrates and nitrites, just eat it sporadically for optimal health.
We use mushrooms for our egg and bacon cake. I would not miss a chance to include any vegetables in a dish that my kids will eat. You can substitute vegetable ingredients for anything else you enjoy with your eggs. Some people use spinach, some people use peppers. Adjust our recipe the way you like it. I like including mushrooms because it makes the cake tastier but also mushrooms are rich in fiber, protein, and antioxidants. Any vegetable has its super nutrients so try eating and varying them as much as you can.
Egg Mixture
Pickles add this sour taste to the egg and bacon cake that is yummy. Feel free to substitute them with other ingredients you may like such as olives. We use pickles mainly to add a great flavor to the cake but they do add some nutrients to the overall dish. Also, you can use a different types of pickles. Sometimes I like to use baby pickles.
Cottage cheese, as you can guess, is very rich in protein and calcium. It also has important vitamins and minerals such as Vitamin B, selenium, and phosphorus. Lastly, we use ground black pepper for enriching the taste of the cake and baking soda for volume.
Equipment
We use a fluted cake pan for this recipe as it makes it delicious and beautiful. If you don’t have a fluted cake pan handy, then use a casserole. The rest of the equipment is fairly simple and most households will have it, such as a cutting board, mixing bowls, utensils, pan, etc.
Eggs and Bacon Cake
Ingredients
- 6 oz bacon
- 1 ½ cups cottage cheese
- 13 mushrooms
- 4 eggs
- ½ cup pickles
- ½ tsp baking soda
- ¼ tsp ground black pepper
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Preheat oven to 350 F
- Cut up 6oz bacon into small pieces
- Over medium heat, saute the chopped 6 oz bacon. Wash hands after handling the bacon.
Prep Egg Mixture
- Beat 4 eggs in a bowl. Wash your hands after handling eggs.
- To the 4 eggs, add ½ tsp baking soda, ¼ ground black pepper, 1½ cups cottage cheese, and ½ cup chopped pickles. Mix well.
Fluted Cake Pan Prep
- Spread the bacon and mushroom mixture on the bottom of the fluted cake pan.
- Spread the egg mixture on top of the bacon and mushrooms
- Bake the eggs and bacon cake on 350 F for 30 min.
