How to Serve The Turnips And Carrots Salad

I make this recipe for birthday parties, and also bring it to potlucks. People like it as it is a relief from the mayo rich salads. It is also something different they usually haven’t tried before. It is also almost certain to be the only unique salad made from turnips! This recipe is a traditional Bulgarian recipe served with olives on the side.

  • 2 medium turnips
  • 5 medium carrots
  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar with the mother
  • ¼ tsp pink Himalayan salt
  • 1 tsp dill dried

  • Gather all ingredients

  • Scrub turnips firmly with a clean vegetable brush under running water
  • Scrub carrots firmly with a clean vegetable brush under running water. Peel the carrots as needed
  • Using a food processor with the shredding blade, shred the 2 medium turnips

  • Pour the shredded turnips into a bowl
  • Using a food processor with the shredding blade, shred the 5 medium carrots
  • Pour the shredded carrots on top of the shredded turnips

Ingredients

Vegetables

  • Cabbage – we make this salad with green cabbage, however, feel free to make it with purple cabbage. The salad is as delicious and nutritious with either color of cabbage. We slice the cabbage to make it easier to chew and digest later on. Try our cabbage stew and purple saute cabbage recipes!
  • Carrots – those nutritious root vegetables are great for salads. We use fresh carrots in some of our juices too. For instance, we use fresh carrots in our carrot and apple juice. We like to peel our carrots to get rid of the pesticides unless the carrots are organic.

Dressing

  • Apple cider vinegar with the mother – this is our favorite vinegar we use for our salads that do not require cooking. The reason is because this vinegar with the mother has live bacteria and enzymes that are great for our immune and digestive systems.
  • Olive oil – we use olive oil which is rich in healthy fat. Adding fat to salads helps the vegetable vitamins and minerals absorption.
  • Pink Himalayan salt – this type of salt is healthier than the regular table salt. We use it sporadically. In fact, I don’t eat my salads with salt at all. I use other ingredients to make my salad salty such as feta cheese.

Herbs

We use fresh dill for this yummy cabbage, carrots, and dill coleslaw salad. The smell of the dill makes the salad aroma much tastier. If you don’t have fresh dill on hand, you can use dried dill (also known as dill weed). However, the taste and smell will be much more different.

Equipment

We are excited to adopt the food safety guidelines and make our recipes as safe for our readers as possible. As part of this initiative, we suggest that all hard vegetables are brushed with a vegetable brush under running water. Especially during Covid-19 days, this practice along with washing hands prior to cooking could save your life.

We use a food processor to grate the cabbage and carrots into a coleslaw. If you don’t own one we strongly suggest you buy one as there are so many foods we make with the food processor: sauces, desserts, salads, and purees just to name a few. You can also chop the cabbage by hand using a knife and a cutting board. You can grate the carrots with manual grater if you prefer not to upgrade your kitchen equipment.

I like making this salad when we go to parties. It is very easy and quick to make. It also doesn’t get soggy from the transportation. I usually come back with an empty plate as people enjoy a salad without mayo as a base with the cabbage.
