As we briefly mentioned in our recipe intro, this fresh carrots salad is nutritious heaven. In the ingredients section, we break down some healthy information based on an ingredient. Just know that with this salad, you will boost your body with vitamin A, B, C, K, biotin, fiber, calcium, iron, potassium, beta-carotene, proteins, enzymes, and friendly bacteria, healthy monounsaturated fats, omega-3 fatty acids. Now that is what I call a super-diet salad choice!
What To Add To The Salad
We chose to make a recipe that is extremely easy to make. All you have to do is just shred some carrots. However, if you are looking for some addition to the salad, try fresh dill. It just adds flavor to the salad that I really like. Also, check our turnip carrot salad and our cabbage carrot salad. They are super delicious and both very healthy as well.

Carrots are a super-food very rich in beta-carotene which our body converts to Vitamin A. This boost our immune system, makes our skin healthier, and improves our vision. My family loves baby carrots as a snack, but sometimes we get tired of eating them. Hence, this super easy, quick, and refreshing recipe comes handy to include some diversity in our healthy diet.
I peel the carrots only if they are not organic to get rid of pesticides and chemicals. I also peel the carrots if they have visible damage on the outside. If the carrots are organic and look intact, I don’t peel them to preserve the vitamins they contain in the peel.

Apple Cider Vinegar With The Mother
We use apple cider vinegar with the mother for our salad dressings as it contains proteins, enzymes, and friendly bacteria. When To Dress The Salad
You can make this salad ahead of time. After you shred the carrots, you can put them in an air-tight container in the fridge. Prior to serving the salad, just dress it with the vinegar and olive oil. That way it won’t get soggy if you dress the salad too early. We sometimes save leftovers that have the dressing for the next day, and the salad is still very delicious and not that soggy at all.
Equipment
We use a food processor for this recipe to grate the carrots. It is much easier and quicker. You can use a manual grater if you don’t own a food processor. We suggest adding a food processor to your kitchen accessories because it is very handy for grating vegetables. We also use it for dips and even desserts. Check out our brownies recipe made with a food processor. The rest of the kitchen equipment is basic such as a knife and a cutting board. I use a knife to clean the carrots, but you can use a peeler if that is easier for you.

- 1 lb fresh carrots
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar with the mother
Instructions
- Wash your hands with soap and water. Check our article on more details on how to properly wash your hands.
- Gather all ingredients
- Wash the carrots with a vegetable brush under running water. Peel them as needed.
- With a food processor using the shredding blade, shred 1 lb fresh carrots
- Pour the shredded carrots in a bowl
- Add 2 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar with the mother
- Mix well to blend the flavors.
- Enjoy!

- Use fresh dill if you have. It makes the salad tastier. We didn’t include one in this version of the salad for simplicity reasons.
