
Healthy sweet and sour pork recipe over bulgur ready in 30 min. This recipe is very rich in dietary fiber, protein, Vitamin C and A and iron. Our sweet and sour pork over bulgur is made with no processed sugars. We use raw honey and apple cider with the mother for an extra boost of probiotics, vitamins, minerals, amino acids and enzymes. Bulgur alone has 18 amino acids and is a complete protein in addition to the amino acids boost you will get from the vinegar with the mother.
Sweet and Sour Pork Over Bulgur
Equipment
Ingredients
- 3 pork chops
- 1 medium red bell pepper
- 1 medium yellow bell pepper
- 3 scallions
- 2 cloves garlic
- ½ tsp pink Himalayan salt
- ¼ tsp ground black pepper
- 2 tbsp whole wheat flour
- 1 tbsp avocado oil
- ½ cup stock
- 2 tbsp raw honey
- 2 tbsp liquid aminos
- 1 tbsp apple cider vinegar with the mother
- 2 cups bulgur
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under running water.
- Core, seed, and dice the 2 bell peppers into 1-inch pieces
- Slice the scallions, separating the greens and whites
- Mince the 2 cloves garlic. You can add the white scallions to the garlic if you would like to save a separate container.
Bulgur
- Prepare the bulgur. Follow this link to see how we make bulgur from scratch.
- While the bulgur is simmering cook the topping
Topping
- Chop the pork into bites size
- In a plastic bag, combine ½ tsp salt, ¼ tsp ground black pepper, 2 tbsp whole wheat flour. Close the plastic bag (could be sandwich plastic bag) and shake the ingredients well to mesh.
- Add pork bites into the plastic bag (you might have to do this into batches depending on the size of your plastic bag). Close the plastic bag and shake well for the pork bites to coat with the flour and seasoning.
- Add 1 tbsp avocado oil to a non-stick pan. Over medium heat, cook the coated pork bites for 2-3 minutes until brown from all sides.
- Add the 2 cloves garlic and 3 scallion whites. Cook for 1-2 minutes, until softened
- Add the bell peppers. Cook for 4-5 minutes, until tender. Stir occasionally.
- Add ½ stock and simmer until the sauce thickens
- Turn the heat off and add 1 tbsp apple cider vinegar, 2 tbsp liquid amino, and 2 tbsp raw honey. Mix well.
Finish
- Serve the sweet and sour pork on a bed of bulgur garnished with the scallion greens
- Enjoy!

Notes
- I freeze my own stock and use it. In this recipe, you can use any stock you have available (i.e. vegetable, pork). You can also use water instead.
- 3 pork chops is about 1 pound of pork
