  • Gather all ingredients

  • Scrub firmly the bell peppers with a clean vegetable brush under running water. Core, seed, and dice the 2 bell peppers into 1-inch pieces

  • Gently rub scallions under cold running water. Slice the scallions, separating the greens and whites

  • Gently rub the garlic under cold running water. Peel and mince the 2 cloves garlic. You can add the white scallions to the garlic if you would like to save a separate container.

Cauliflower rice

  • Prepare the cauliflower rice (or buy from the store). Follow the link to see how we make cauliflower rice from scratch.

  • While the cauliflower rice is roasting (or cooked by the directions on the package you bought from the store), cook the topping


  • Chop the pork into bites size
  • Wash cutting board, counter, and utensils that have touched the raw pork to prevent cross-contamination. Wash hands with soap and water. 
  • In a plastic bag, combine ½ tsp salt, ¼ tsp ground black pepper, 2 tbsp whole wheat flour. Close the plastic bag (could be a sandwich plastic bag) and shake the ingredients well to mesh.

  • Add pork bites into the plastic bag (might have to do this into batches depending on the size of your plastic bag). Close the plastic bag and shake well for the pork bites to coat with the flour and seasoning.
  • Wash hands with soap and water. 
  • Add 1 tbsp avocado oil to a non-stick pan. Over medium heat, cook the coated pork bites for 2-3 minutes until brown from all sides.
  • Cook the pork until internal temperature reaches 145 degrees Fahrenheit on a food thermometer. Give it at least three-minute “rest time” after removal from the heat source prior to eating.
  • Add the 2 cloves garlic and 3 scallion whites. Cook for 1-2 minutes, until softened

  • Add the bell peppers. Cook for 4-5 minutes, until tender. Stir occasionally.

  • Add ½ stock and simmer until the sauce thickens
  • Turn the heat off and add 1 tbsp apple cider vinegar, 2 tbsp liquid amino, and 2 tbsp raw honey. Mix well.
