Making spinach puree with fresh spinach is a matter of 3 minutes. It is super easy. In just 20 calories you get more than 150 percent of your daily Vitamin A needs and so much iron! I use the spinach to make a puree out of it, and save the water full with vitamins for stock. When I make rice, for example, instead of water I use the stock from the spinach and my kids can’t make the difference. The bonus – I am boosting the nutritious value in the meal by using the spinach stock instead of water.
Also, when I make the spinach puree, I use it in recipes that my kids love eating. For example, I make pasta and add the spinach puree there. Check out this pasta recipe as example. My kids love eggs so I use the spinach puree with the eggs too. They call them “green eggs”. My kids will eat the spinach without making fuss about it as the flavor is not strong once added to other foods. Win win!

Notes
- You can use 1-2 tbsp of water to wilt the spinach. I use 1 cup as I save the water rich in vitamins for stock.
- I use spinach puree for many recipes to sneak in great nutrients to the dishes.
