
This is very easy original pumpkin pie recipe with frozen puff pastry. It only takes 5 active minutes and total of 25 min to make this dessert, appetizer, Halloween or Thanksgiving delight. We also use the same filling for our pumpkin pie filo dough recipe.
It is made with pumpkin puree (great source of vitamin A) and seeds (great source of healthy fats) The only sweetener in this recipe is honey. I use a variety of seeds to boost the nutrition such as hemp seeds, chia seeds, sunflower seeds, pumpkin seeds, brown, hemp seeds, and golden flax seeds.

Pumpkin Puff Pastry Pie
Ingredients
- 1 package puff pastry
- 1 egg
- 1 can pumpkin puree 15oz
- ¼ cup honey
- ½ cup ground seeds
- 1 tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 tsp avocado oil
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Grind all seeds of your choice with a coffee grinder or any tool you have available in the kitchen. You can also buy already ground seeds. You will need ½ cup of ground seeds to put into the batter. See notes for seeds example.
- Preheat oven to 400 degrees Fahrenheit
Make filling
- In a bowl, combine 15 oz (more or less depending on your taste) pumpkin puree, ¼ cup honey, ½ cup ground seeds, 1 tsp ground cinnamon, ¼ tsp ground ginger, ¼ tsp ground nutmeg, ¼ tsp ground clove.
- Mix well with a spoon.
Assemble pie
- Grease a baking dish with avocado oil (I use spray)
- Layer 1st sheet of puff pastr
- Spread filling on top
- Layer 2nd sheets of puff pastry
- Separate the yolk of the egg and beat it with a fork.
- Spread the yolk on top of puff pastry sheet with a brush or finger
Bake
- Bake for 20 minutes until the pastry sheets are done
- Cut the pie into 25 pieces.

Notes
- I grind all types of seeds ahead of time and store in air tight container for several days. I use the seeds in many recipes such as breads, pancakes, muffins, etc. It is easier and quicker to grind more seeds at one time versus every time I need them for a recipe.
- You can buy already ground seeds at the store too if you don’t have a tool to grind them yourself or want to save time. I don’t grind the hemp seeds.
- 1 tbsp pumpkin pie spice can be substituted for the ground cinnamon, ginger, nutmeg, and cloves
- For even healthier recipe, you can make your own pumpkin puree from a pumpkin. Bake the pumpkin, and then puree the flesh.
- These are the seeds I use: hemp seeds, pumpkin seeds, sunflower seeds, sesame seeds, brown flax seeds, golden flax seeds and chia seeds.
