
This is a hearty beef, pearl barley, tomato, mushroom and celery soup my entire family loves especially in cold winter days. I make this soup with marinara from a glass jar as the tomato base. I try when I can not to use canned food because of the BPA. BPA is a chemical that has been associated with health problems like heart disease and type 2 diabetes. Some canned foods also have salt, sugar and preservatives which I try to exclude from our diet as much as possible.
I usually make the soup in the crock pot. If I am in a hurry, I set it up on high for about 3 hours. If I make the soup in the morning, I set it up for 5-7 hours on low. Bottom line, the beef and barley need to be cooked to your taste.

Beef, Barley and Tomato Soup

Ingredients
- 1 lb beef
- ½ cup pearl barley
- 1 jar marinara
- 1 onion
- 3 cloves garlic
- 4 big mushrooms
- 2 stalks celery
- ¼ tsp pink Himalayan salt
- ¼ tsp ground black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 16 oz warm water
Instructions
Prep
- Wash hands with soap and water. Check out our article about how to wash hands properly
- Gather all ingredients
- Gently rub produce under cold running water. Scrub firm produce with a clean vegetable brush under running water.
- Chop the mushrooms
- Dice the onion and mince the 3 cloves garlic
- Slice 2 stalks celery
- Cut the beef meat into 1 inch cube bites
Cook
- In a slow cooker (aka crock pot) combine all the ingredients: 4 chopped mushrooms, 2 sliced stalks celery, 1 diced onion, 3 cloves minced garlic, 1 pound bite sized beef meat, 1 jar marinara, 2 jars (about 16 oz) warm water, 1/2 cup pearl barley, 1 bay leaf, 1 tsp dried thyme, 1/4 tsp pink Himalayan salt, and 1/4 tsp ground black pepper
- Stir the soup
- Cook for 3 hours on high or 5-7 hours on low until barley and beef meat are done to your likeness
- Enjoy!

Notes
- You can make this soup on the stove as well. Combine all ingredients and cook until beef and barley are done to your taste.
- I use beef meat for slow cooker (the round top) but you can as well buy the pre-cut stew beef meat and save yourself some time cutting
- I use the marinara jar to add water to the soup. You can add more/less depending on the thickness of the soup you like
